Knowledge of how to use various kitchen equipment.Ability to be on your feet for an entire shift.Culinary degree preferred but not required.Experience with stick burner smokers preferred but not required.Proficiency in basic cooking techniques (saute, grill, fry, braise, etc.).Ensure food is leaving the kitchen as quickly as possible during peak hours, while still adhering to our quality standards.Communicate any and all issues with Culinary Director or other appropriate staff.Develop specials utilizing existing inventory.Make sure food is cooled, held and stored safely and appropriately.Assist with managing inventory and ordering.Assure a clean and safe working environment.This would be a great opportunity for someone looking for a change from a traditional kitchen, and who would be excited about spending their days on a working farm in a casual atmosphere making delicious food for good folks. All of our menu items will feature what we grow whether its our apple cider, apple-based spirits or vinegars, apple varietals or smoke from our apple wood. As well as coming up with creative meals for evening guests at our distillery. The sous chef will report to our Culinary Director, manage line and prep cooks and help run the day-to-day food operation by keeping things clean, organized, efficient and fun. We are eagerly seeking an enthusiastic and experienced sous chef/assistant pit master to assist in the menu development and launch of Harvest Smokehouse. It will feature locally-sourced and ethically-raised pork and poultry slow-smoked over our own apple wood, as well as preserves, house cured and smoked meats by the pound, ice cream, salads, sandwiches and snacks. The latest venture of the farm is Harvest Smokehouse opening in early summer 2021. The 200 acre orchard also includes a farm stand, bakery, retail store and the award-winning distillery, Harvest Spirits. Golden Harvest Farms is a family-run apple orchard in Columbia County, New York dating back to the 1950s with known roots reaching to the1800s.
